Mediterranean Sea Salt Trio

I was shocked to discover that roughly 75% of the daily salt consumption by the average American comes from processed food.  Sure, I have read that the USDA recommends that we limit our intake of salt to 2,300 mg or roughly 1 teaspoon of salt, but there is no question that salt improves flavors.  No less of authority then the late Marcella Hazan stated that “Nothing is so necessary to the production of taste as salt.”  What to do?  

As someone who loves to cook, I avoid processed foods and focus instead on healthy fruits and vegetables and humanely raised meats.   Rather than cook with salt, I tend to flavor my food with finishing salts, generally large sea salt crystals.  Aside from being able to control my intake of salt, the bold colors of these infused sea salts adds both texture and color to most dishes.  My dinner guests would most certainly agree.

Things You Should Know About Salt and Sea Salt

Many vendors promote the health benefits of one salt over another and, most certainly, hype sea salt, but all salt - whether mined or harvested from the sea - is virtually identical.  Found below are a few considerations you may wish to take into consideration when purchasing salt:
  • Colored salts are generally infused with other minerals to make them more appealing to consumers;
  • The sodium (generally NaCl) levels in most salts are virtually identical, although sea salt crystals tend to be larger than processed "table salts,"
  • There is no clear evidence that sea salt is more nutritional than table salt;
  • Iodine in salt is equivalent to fluoride in toothpaste.  Most independent studies suggest that if you are eating a balanced diet, there is no need for iodized salt.  Sea salt does not naturally have iodine, so it has no material impact on your retention of iodine.

How to Use Sea Salt

Over the years, I have learned to cook with less salt and let the natural ingredients of the food speak for themselves.  Nevertheless, I do believe that a dash of "sea salt" does accentuate the flavor of most foods.  As such, I use sea salt crystals mainly as a finishing salt to add both flavor and color to my dishes.  

A little salt goes a long way to improve the flavor profile of most dishes.
